    No sifting of flours, or beating eggs, no need for a bunch of mixing bowls or extra dishes. These are the easiest muffins I have ever made, simply toss all ingredients in the food processor, transfer dough to molds, and set in the oven. That’s it!

    Ingredients:

    6 eggs
    1 cup of fresh orange juice
    1/2 cup coconut oil
    3/4 cups of dates (about 16 deglet dates)
    2 tsp of vanilla extract
    The zest of 3 oranges (about 4-5 tbsp) or 1/2 tsp of orange extract
    1 cup coconut flour
    1/4 tsp of salt
    1 teaspoon non-aluminum baking powder
    1 teaspoon baking soda
    1/2 cup of apple sauce

    Preparation:

    • Preheat oven to 350.
    • Using a food processor or immersion blender combine all ingredients until dates are finely ground.
    • Pour batter into greased or paper lined muffin molds.
    • Bake for 25 -30 minutes or until a knife inserted comes out dry

      Could you substitute honey for the dates?? Want to make these and realized I don’t have dates.

        yes, but you may need to decrease the amount of wet ingredients because it would make them too moist
