    While rice enjoys near-celebrity standing among grains, if criteria for celebrity status was ounce-for-ounce nutrition, cauliflower would undoubtedly be the undisputed, undefeated champion. Try this recipe for a dish chock full of antioxidants, antiinflammatory agents, and  vitamins and minerals that are protective against the 2 leading causes of death in our country, heart disease and cancer.  Eat cauliflower, avoid becoming a statistic!

    Ingredients:

    1 head of cauliflower
    5 asparagus, sliced
    3 green onions, sliced
    1 medium carrot, grated
    3 tbsp of oil of preference
    1 tbsp of sesame oil
    2 eggs
    1/2 cup of chopped red onions
    3 tbsp of coconut aminos ( soy sauce replacement)
    Salt and pepper to taste

    Preparation:

    • In a food processor pulse in the cauliflower florets until chopped to the size of rice (work in batches so that it’s evenly grated) or shred using a food grater.
    • In a large skillet, saute 2 tbsps of olive oil, sesame oil, red onions, carrots, asparagus until tender, move vegetables to one side of the skillet and scramble the eggs on the other side until half way done.
    • Mix in with the vegetables,  cauliflower, remaining oil, aminos, salt and pepper; cover and cook for 5-7 minutes on medium heat.

    You want the cauliflower to be tender but not mushy

    Riceless Fried Rice

    Cook time:  10 mins
    Total time:  25 mins

    • 1 head of cauliflower

      My husband was not sure if I was kidding or being serious when I told him that I was making a Riceless Fried Rice, he even gave me that look we called the stink eye, however, after joking while I was making dinner he got very serious when we sat at the table. His words after trying his first bite were “wow, this is really delicious; I like cauliflower” and who would not if this dish is colorful -I added half a red bell pepper I have leftover from the other day, crunchy and full of flavours.
      The next time I make this recipe I need to add the asparagus as I did not have any and the sesame oil as I completely forgot about it. Yes, I read the recipe before and during cooking but still I forgot, hum!
